This smooth, classic Ethiopian washed coffee is sourced from Wondefrash’s
only washing station, the Hambella Station, which sits at about 2300 masl in
the Hambella district of Guji.
The cherries are collected from around 40 nearby smallholder farmers and the
outer skin and most of the fruit flesh (mucilage) are removed using a pulping
machine. The beans, still covered in a sticky layer, are then fermented in large
cement tanks, where natural microbes break down the remaining mucilage.
After fermentation, the beans are washed clean with fresh water and dried on
raised African beds with the parchment layer still on. Drying usually takes 8–12
days until the beans reach the right moisture level. The parchment is kept on
until the coffee is sold and prepared for export, which helps preserve quality.
